The story behind the bakery that became a New York institution.

Before there was a signature cookie, Pam Weekes and Connie McDonald supplied bread to New York City restaurants. The friends opened their own bread shop on West 74th Street in 1995 and called it Levain Bakery after the French term for leavened bread.

Daily work meant making loaves, rolls, and baguettes by hand with a small bakery crew. While training for triathlons, Pam Weekes and Connie McDonald created a large chocolate chip walnut cookie for energy; the trial batch sold rapidly and became closely identified with the shop.

The Levain Way carries that origin forward through craft, quality, care, time, comfort, celebration, sensory texture, and the joy of sharing baked goods.

We’ve always been incredibly grateful for the support of the communities we’re a part of, and we strive to reciprocate that support in ways big and small. On opening day, our new bakeries donate all proceeds to a local charity organization, and at the end of every day thereafter, we donate all unsold baked goods. It brings us great pride to think of all the people who’ve been treated to a fresh cookie, a delicious bread roll, or a flavorful muffin in the midst of a challenging day.
